"In Sauris since 1862". Almost a century and a half of market presence is certainly quite something
but if parish records hadn't been lost in a fire in the last century it might have been possible to
trace the origins of the 'Prosciuttificio Wolf' even further back.
Recorded history, however, states that in 1862 Pietro Schneider began to make a name
for himself or, rather, a nickname, Wolf - and to sign his prosciutto hams on which
his ability as a pork-butcher,
the tricks of the trade,
expert smoking and - a factor not easy to imitate - the particular climate of Sauris,
conferred a unique quality.
From then on this tradition was passed down from generation to generation and a century later,
in 1962, Pietro Schneider's grandson, Beppino Petris, launched the 'Prosciuttificio Wolf'.
Thanks to the tenacity of the proprietor and, more particularly, of his wife, and to the undisputed
quality of the product, over a period of no more than twenty years the business has grown and expanded
beyond the confines of the immediate locality to establish itself on the wider Italian and international
markets.
To satisfy increasing demand new production premises were opened in 1983, to be expanded further
in 2001 - a surface area totalling 10 thousand square metres.
In time this will mean increased production capacity well beyond the already remarkable 50 thousand hams,
100 thousand specks and hundreds of thousands of kilos of top quality sausage
and salami produced each year. And all without losing sight of that excellence on which the
Wolf mark has built its name.
The product derives its distinctive flavour above all from the
traditional smoking methods used. Just as in Pietro Schneider's time, back in 1862,
beechwood from the local woods is burned in traditional furnaces and the smoke channelled
to the smoking chambers. 'Wolf' today employs more than 50 people.
Considering that the entire population of Sauris counts little more than 400 souls,
the contribution of the business to the local community is not difficult to imagine.
Wolf's main products include: Cured Prosciutto Ham (smoked and DolceSauris) -
Sauris Speck - Culatello - Ossocollo - Salami - Cacciatorini (mild, smoked, peppered) -
Sausage, either fresh or peppered - Pancetta (bacon flat or rolled, natural, smoked or peppered) -
Guanciale - Lard - Cotechino - Wurstel. |
