Welcome to the world of the malga. The word malga is usually taken to mean the pasture-land above
the tree-line at an altitude of about 1,500 metres and upwards and the attendant buildings necessary
for pastoral farming: the casera where the products are worked and preserved and where the workers
lodge (the main person being the malgaro) and the sheds or enclosures which
provide shelter for the animals.
In use only during the summer period, generally from the first half of June to the beginning
or sometimes the end of September, for Sauris they are a reminder of an activity which at one
time was fundamental to the area's economy. Sauris and its surrounding territory used to be home
to a considerable number of malghe.
The unique geological configuration of the va.m. toy makes
the grass so rich as to place the local products among the best
and tastiest on the market.
Today, dairy produce is of minor importance to the economy so the number of active malghe
has been downsized, while still maintaining the quality of yesteryear.
